Some people love to cook, some don’t.

I happen to be one that does {I bet  you didn’t know that}

Making dinner is one of my favorite parts of the day…usually, that is until we sit down to the table, and then the whining.

OMG it’s mind-numbingly annoying.

“what is this?’ “that looks gross.” “can’t you make normal food?” “I’m not eating.”

kids are SO much fun aren’t they?

If  it’s not a burger, pizza, or mac and cheese, chances are there WILL be whining, and plenty of it, and this is why wine was invented.

BUT,  every now and then I like to give my ears, and  my liver, a break, and make something the kids will actually eat without complaint.

There was not a complaint to be heard, but here may have been wine anyways.


Pizza Mac and Cheese

Skillet Mac and Cheese {pizza style}


  • 1 box of elbow macaroni {cooked according to the package directions}
  • 4 Tbsp butter
  • 1/4 cup AP flour
  • 1 1/2 cups of milk
  • 1/2 cup of pizza sauce
  • 1 1/2 cups of shredded mozzarella cheese
  • 1/2 cup of shredded sharp cheddar
  • 1/4 cup panko breadcrumbs
  • 1/4 grated Parmesan cheese
  • pepperoni slices


  • while the pasta is cooking, heat a skillet over med. heat
  • add the butter, and allow to melt
  • stir in the flour to make a roux
  • whisk in the milk, bring to boil {whisking often} until it thickens {this takes a few minutes}
  • Stir in the pizza sauce, and salt to taste {I did not add any}
  • Remove the skillet from the heat and stir in the mozzarella and cheddar cheeses
  • Add the drained macaroni and toss to evenly coat
  • top with the pepperoni slices, the bread crumbs and Parmesan cheese
  • broil until the top begins to brown {about 2 minutes}

    Made the mac and cheese tonight – changed to all gluten free ingredients (used extra fine white rice flour for roux). It was delicious! We are going to try adding different ingredients next time, like sausage, mushrooms and sautéed onions. Thanks for the recipe – it’s a keeper!

    Thank you for this. Seriously I just want to hug you. I made this for dinner last night and it is SO, so very delicious. I’m eating the leftover for lunch and all my coworkers are asking for the recipe. I’m adding it to our go-to easy dinners. And I already can’t wait to make it again!! :)

    You are too funny! The whole reason I ended up on your page was to find something a little different that my son would eat without saying all those things you said kids say. I wish there was wine at my table (preggers).
