After s’mores week and national cheesecake day, it feels good to be getting back to fit Fridays.

Maybe it’s just me, but summer and treats just seem to go hand in hand, and that can mean trouble if you are trying to watch what you eat.

Ice cream is everywhere. I don’t want to deprive my kids, but at the same time it is hard to watch your family enjoying ice cream and not eat any.

 

Blueberry Frozen Yogurts Granola Bars

 

We love going out for  fro-yo, but who am I  kidding, it’s just as bad as ice cream when you load it up with all the goodies available.

So this week for fit Friday, I wanted to make a frozen treat {it is SCREAMING hot here this week} that I could enjoy along with the rest of my family.

I love yogurt and granola for breakfast, but never really thought about it as dessert. However, when frozen together it feels more indulgent. I did use a whole milk European style yogurt for a creamier feel, but you could use whatever you feel comfortable with. Seeing as this is desert, I went for it. I told you I don’t do well if I feel deprived.

For the crust I used Bobs Red Mill Apple Blueberry Granola; I love homemade, but again it is HOT here, and turning on the oven is NOT an option. To go with the blueberry granola I used Blueberry Pomegranate Yogurt from Straus, this is by far Stella’s favorite yogurt. I love my homemade, but if you’re going to buy yogurt, Straus is the way to go, and the blueberry is AMAZING.

When you put those two things together, and freeze them, you have my idea of a healthy ice cream cake.

Frozen Yogurt Granola Bars

Ingredients

  • 2 cups of granola
  • 1/4 cup coconut oil
  • 2 cups of yogurt
  • 1/2 cup blueberries {or other fruit if using a fruit yogurt}

Instructions

  • combine the granola and coconut oil
  • press into a square baking dish {8x8 or 9x9}
  • bake crust at 350 for 10 minutes
  • cool crust and freeze for 30 minutes
  • mix together the yogurt and fruit {if using}
  • spread on top of the crust, and freeze
  • let the bars sit out a few minutes before slicing, and run your knife under hot water to make cutting even easier
