Strawberry Coffee Cake

Spring is here. The birds are chirping. Flowers are blooming. The sun is shining, and here in blogland babies are EVERYWHERE. Seriously, it’s enough to kick anyone’s ovaries into overdrive.

All those pudgy cheeks and baby toes just perfect for nibbling on.

Babies are a perfect reason to celebrate, and that couldn’t be more true for this special bundle.  Lisa, Nathan, and their two amazingly adorable kidelts are adding  a baby girl in a few short weeks,  and if you have ever met Lisa, they just don’t come any sweeter.

The blueberry coffee cake I made for the shower we had for  Stephanie {Back for Seconds}  was such a big hit with my own kids, that I just made it pink with strawberries this time around. A little girl needs her pink.

Strawberry and Jam Coffee Cake

Ingredients

  • 1/4 cup butter {softened}
  • 3/4 sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup of sliced strawberries
  • 1/3 cup strawberry jam
  • 2 Tbsp sparkling {or raw} sugar
  • Glaze:
  • 1 cup powdered sugar
  • 1 - 2 tbsp milk or cream
  • 1/2 tsp vanilla

Instructions

  • cream together the butter and sugar
  • scrape down the sides of the bowl and add egg and vanilla
  • combine the flour, salt, and baking powder
  • add half of the flour to the butter/egg/ sugar
  • add milk
  • add remaining flour
  • pour batter into a buttered 9 inch springform pan {or a cake pan}
  • drop jam by tsp, and run a knife through the jam to marble the top
  • top with the sliced berries and the sparkling sugar
  • bake at 400 for about 30 minutes {the center of the cake should be set}
  • allow to cool and then glaze
  • {I added just a small drop of coloring to make the glaze pink}

    What a gorgeous cake, Heather! I remember when I was pregnant with my first, and someone I worked with kept telling me “a little girl needs her pink”. 4 girls later…..I couldn’t agree more! So happy to celebrate with you!

    This is so cute — and so sweet of you to make such a festive treat for Lisa! I’m always a fan of coffee cake because, well, it’s basically dessert for breakfast. And that’s my favorite thing ever since I can completely justify eating an extra dessert that day. ;)
