What could be sweeter than the treats Stephanie from Back for Seconds cooks up daily?

Her latest 9 month project – Asher  Jackson, seriously the sweetest little face ever,  and I am so happy to be teaming up with some great friends for this “virtual” baby shower.

My sweet little contribution, coffee cake. There is just something about baby showers that makes me crave coffee cake.

I have been dying to try this blueberry coffee cake recipe from Averie, and this party seemed just the place to do that.

 

Blueberry Coffee Cake with Glaze

 

Blueberry Coffee Cake

Ingredients

  • 1/4 cup butter {softened}
  • 3/4 sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup frozen blueberries
  • 1/3 cup strawberry jam
  • 2 Tbsp sparkling {or raw} sugar
  • Glaze:
  • 1 cup powdered sugar
  • 1 - 2 tbsp milk or cream
  • 1/2 tsp vanilla

Instructions

  • cream together the butter and sugar
  • scrape down the sides of the bowl and add egg and vanilla
  • combine the flour, salt, and baking powder
  • add half of the flour to the butter/egg/ sugar
  • add milk
  • add remaining flour
  • pour batter into a buttered 9 inch springform pan {or a cake pan}
  • drop jam by tsp, run a knife through he jam to marble the top
  • sprinkle on the blueberries and the sparkling sugar
  • bake at 400 for about 30 minutes {the center of the cake should be set}
  • allow to cool and then glaze

By using a springform pan, you don’t have to invert the cake onto a plate {I have never been good at doing this}, and you definitely want the top of the cake to show.

My family LOVES strawberry jam, so that is what I used, but you could use your favorite, and I was thinking that lemon curd would be out of this world. I see another cake in my future soon.

As for Stephanie and baby Asher, I wish them all the best for this new year and the future that follows.  Truly, there is nothing more precious than family, and I could NOT  be any happier for their newest addition.

    Looks great to have with my coffee…..Just checking, is that 1/2cup of milk? I am in Australia….and we use different measurements so need to be sure!
