Blogging about it has been such an adventure, and  I have met SO many wonderful friends in person and online.

Unfortunately,  along with the friends I’ve gained, I’ve gained something else as well…





SO, along with some of my best blogging friends, I am doing something about it.


Baked Appple Pie in an Apple - #pie


However, I do NOT want to focus on losing weight.  That’s NOT fun, and I happen to think that it contains a negative message {yes I know I have weight to lose, but that’s not how I choose to look at it}.  Instead I want to focus on moving more and eating better.

{I am moving a lot more – as we are now walking to and from school, every. single. day. }

For the eating better  part… I am going to skinny some of my favorites to make them better for me, because we ALL know that to deprive yourself of dessert  makes you want it that much more.

First up, the classic apple pie. Fall on a a plate.

By baking the pie in the apple, in place of all that crust, the calories are slashed, along with a lot of the fat. You get all of the great apple and cinnamon taste, with just a bit of crust. Plus, you know my crust skills are seriously lacking.  

I promise you will NOT feel cheated in any way, and everyone get’s their own.


Skinny Wednesday ~ {apple pie baked in an apple}


  • 5 large apples{i used a mix of Fuji and Granny Smith}
  • 1 pre-made crust {you can of course use home made}
  • 1/2 cup of sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 tbsp butter {cut in 8 small pieces} - optional


  • Core and hollow out 4 of the apples {do NOT cut all the way through}
  • dice up the apple from the 4 cored and the 1 remaining apple
  • combine the apples with the cinnamon , sugar, and nutmeg
  • fill each of the 4 apples with the filling
  • place two small pieces of butter in each apple {this is optional}
  • roll out your pie crust
  • cut into strips
  • create a lattice on top of each apple {trimming the extra on the sides}
  • bake @375 for 30 minutes

The best part – you can eat the entire pie :)

I will never be one for giving things up entirely, and I do believe it’s okay to have a little of everything in moderation.

    Those darn LB’s!! The hazards of blogging! I like your idea of Skinny Wednesday! That is very inspiring Heather. This is such a great idea! Why not just use the apple as is? They are so sweet and delicious anyway.

    “Moving more and eating better”–can I give a huge Amen to that! I’m also trying to get my butt back in gear after an indulgent summer of BBQs and no-bake desserts. These little apple pies look like the perfect way to eat healthy while not missing any of the good stuff :) Thanks so much for hosting Wake Up Wednesdays. Such a blast!

    My recipe tomorrow is a skinny one. And I have a recipe next week for an apple idea that’s single-serving. I LOVE your little apple pie in an apple. So cute! And as bloggers, it’s so easy to sample a bite too many b/c we are around, every day! Good for you for changing things up a bit :)

    It’s a perfectly adorable indulgence, Heather! Cinnamon and apples make my spirit happy. Oh, and I’ve made these before… adding 1 caramel candy to the inside of the apple is pure bliss. Shhhh… I won’t tell a soul 😉

    I think I’m going to love your new Skinny Wednesday series. I can relate to the whole gaining weight thing. I have gained AT LEAST 10-15 pounds just since the beginning of this year. YIKES! I love food and don’t like making sacrifices. I think it may have something to do with the stresses in my life. But I digress, love your version of apple pie. Keep ’em coming!

    Who needs to cut slices of apple pie when you can give everyone their individual apple pie serving??? This is genius!!!! I love it and am pinning this so I remember to make it… I think I will bring it as our dessert for our block party that is coming up! Yay!

    I love that you made this into a single serving apple pie. I’m always on the lookout for healthier dessert recipes. what a great idea, will be making this soon as the weather cools down a bit. Love it!

    I am a daycare teacher and I am always looking for fun somewhat healthy treats for my class. I love this idea for fall. I think I am going to try this but with small apples if I can find some. Not only will the kids love them but I feel like its a treat the parents won’t mind either.
