Today was the first day of school for my kids. I’m sad to see the summer end,but I’m also SO excited to start another year; especially because both of my kids can now walk to school.

{exercise and a quiet house, it’s a good thing}

I was really surprised at how smoothly our morning went.  Even though the kids have been sleeping until 9:30 or 10 most mornings this summer, they were up and dressed in a flash. We were actually out the door EARLY:)

Having the lunches ready the night before was a BIG help, and I am LOVING our new PalnetBox lunch boxes. They just make you want to pack a fun lunch.

To get the year started right, I wanted a treat for the box that was delicious but also healthy.

{of course I didn’t let the kids know they were healthy}

These brownie bites are similar to the  copycat larabar brownies  but  with the addition of coconut butter, they are simply amazing.

Raw Brownie Bites

Ingredients

  • 1/2 cup of almond meal
  • 6 large pitted dates
  • 2 tbsp coconut butter
  • 2 tsp vanilla {use the best quality you can afford}
  • handful of chocolate chips

Instructions

  • in the bowl of a food processor, pulse the dates a few times
  • add in all of the ingredients except the chocolate chips
  • pulse until everything is well combined, and you have your desired consistency
  • add in the chocolate chips{about 1/4 cup}
  • pulse a few times {the heat from the processor will slightly melt the chocolate}
  • form the "dough" into balls {I made 12 larger balls}
  • you will need to press firmly {and some coconut oil will drip - this is to be expected} to get the dough to hold its shape
  • roll into balls
  • they are best kept in the refrigerator

** coconut butter in NOT the same as coconut oil

Of course  you can make them without the coconut butter, but it adds a richness to the bites that makes them feel decadent instead of healthy.

    These sound amazing Heather! Our schools don’t start until September so I have a few weeks left (Phew!) but that means I also have to go back to work :( I checked out those Planet Boxes and they look really neat!

    Heather these look amazing, your pictures are outstanding! I sure hope my kids can be up and ready like yours! We’ve been sleeping in late too. I’m sort of dreading the whole morning routine!

    Yeah, for the first day of school! Sounds like things went smoothly, and how nice is it that you can walk to kiddos to school. Such a blessing! These look awesome Heather, love that you used pitted dates in this. definitely pinning to try later and sharing!

    Thank you so much for this! I have a container of coc. butter I mistakenly purchased – thought it was coc. oil. These will be a great snack for my girls. I have everything in my pantry already, so I will whip these up tomorrow-love that!!
