Can I just say

I LOVE summer vacation.

It’s only been two weeks, but we have had SO much fun already

camping

crafting

picnicking

Charlie even went fishing today.

{unfortunately, no fish for dinner tonight}

sleeping WAY late…I’m embarrassed by how late we have been sleeping, but I LOVE it.

Today I had to be up early to get Charlie off on his fishing trip, but then decided to lay back down for just a bit because the house was still quiet. 2 hours later…

needless to say that when Stella and I did manage to get out of bed we were starving

My usual breakfast of fruit and yogurt, while delicious,was NOT going to cut it today.

We needed waffles, and well it’s Friday, so why not make them s’more waffles.  I’m still trying to be very watchful of my eating

so I replaced the butter with Greek yogurt , and you would NEVER know anything was different.

These will definitely be happening again in this kitchen.

S’more Waffles made with Greek Yogurt

Ingredients

  • 1/2 cup of whole wheat or graham flour
  • 1/2 cup of AP flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 egg
  • 2 tbsp honey
  • 1 cup of milk
  • 1/4 cup of plain Greek yogurt
  • 1/4 cup of mini chocolate chips
  • 1/4 JetPuffed marshmallow bits

Instructions

  • combine all of the dry ingredients
  • add the egg, honey, milk, and yogurt
  • mix just until everything is combined
  • stir in the chocolate chips and mallow bits
  • cook in a pre-heated waffle iron
  • makes 6 - 8 waffles {depending on the size of you iron}

because these waffles are my breakfast and lunch

and because I left out the butter in the batter

I added just a teeny bit of whipped honey butter on top.

{a few extra chips won’t hurt either}

    These sound delicious! I’ve been using Greek yogurt in so many things lately, I love how you can substitute it for other ingredients, and how moist and light it makes whatever you are baking!

    This looks so very yummy! I just got a waffle maker for my birthday ( and yes I LOVE getting cooking appliances as gifts! that isn’t sarcastic either! lol ) .. will have to try this recipe out! Love the blog!

    Aren’t you missing baking powder? I’m adding 1 1/2 tsp, since I’ve never seen a waffle recipe without leavening…
