Pudding is quickly becoming one of my new favorite things to make.
It is seriously easy,
and while I’m a BIG
jello chocolate pudding

there is nothing,
and I mean nothing,
that comes close to homemade pudding.
Years back,
my first attempt at pudding making
was an experiment gone wrong.
It was SO gross, that I had not tried again for years.
My conclusion…
sleep deprivation of a parent with toddlers.
It’s really the only thing that makes sense.
Fast forward,
now I’m a pudding making machine.
I found these layered peanut butter and chocolate lovelies
at Joy the Baker.
Peanut butter pudding
and chocolate pudding
heck yeah
but I didn’t want to be a total copycat.
While Joy went for the peanut butter cup
candy option
I’m going Snickers
Peanut Butter
Chocolate
and…
CARAMEL pudding
Rest your arms up for this one,
there is a LOT of whisking involved:)
It may sound like work,
making pudding not once,
not twice,
but three times,
it is very much worth the sore arm muscles.
make each flavor separately, beginning with the peanut butter
Peanut Butter Pudding
~recipe from Joy the Baker
1/3 cup of packed brown sugar
2 tbsp cornstarch
1/4 tsp salt
2 cups of whole milk
1/2 cup of heavy cream
1/2 cup of all natural creamy peanut butter
2 tsp vanilla
in a large saucepan, whisk together the brown sugar, cornstarch, and salt
whisk in the milk and cream
heat on medium, and bring to a simmer {whisking occasionally}
After it begins to simmer, whisk continuously for about a minute {the pudding will begin to thicken}
Off heat whisk in the vanilla and the peanut butter.
Pour into your glasses and chill while you make the other flavors.
Caramel Pudding
~adapted from Joy the Baker
1 1/2 cuos whole milk
1/2 cup heavy cream
2 tbsp cornstarch
1 tsp vanilla
1/4 tsp salt
1/2 cup sugar
in a bowl whisk together 1/4 cup cream, cornstarch, vanilla, and salt
set aside
in a large saucepan heat the sugar with 3 tbsp water
DO NOT STIR
cook over med-high heat until the sugar becomes amber in color
{but watch it closely – it burns easily}
off heat gradually whisk in the milk and remaining 1/4 cup cream
return the pan to the heat, and cook over medium until the caramel has completely dissolved into the milk, and the pudding begins to thicken a bit {about 10 minutes}
whisk in the cornstarch mixture, and continue to stir for about a minute
layer this over the peanut butter pudding and return to the fridge
Chocolate Pudding
~ adapted from Joy the Baker
1/3 cup of packed brown sugar
2 tbsp cornstarch
2 tbsp cocoa powder
1/4 tsp salt
2 cups of whole milk
1/2 cup heavy cream
1/4 cup of chopped dark chocolate
2 tsp vanilla
in a large saucepan whisk together the sugar, cornstarch, cocoa powder, and salt
whisk in the milk and cream and place over medium heat until it begins to simmer
once the pudding begins to simmer, whisk constantly for about a minute while it thickens
off heat whisk in the vanilla and the chopped chocolate
whisk until the chocolate has melted
{I warned you about the whisking}
layer this on top of the caramel pudding
chill for at least 2 hours
serve with whipped cream of course:)

Smooth, creamy snickers? I’m sold. I was really hoping I would read down the recipe and find that I could cheat and do some of the whisking in the electric mixer, but all the whisking is done on or right off the stove. (sigh). Cookie baking has turned me into a whisk wimp.
