{No Bake} Chocolate Chocolate Chip Granola Bars

My son Charlie requested chocolate chip cookies
for lunch box snacks this week.

Great idea I thought.
They’re easy,
and a batch will should last
the entire week.

Much to my dismay,
the bag of chocolate chips in the pantry was nearly empty.

I’m not entirely sure how I let this happen, but I really was not in the mood for a trip to the store.
I had just completed our weekly shopping, and was feeling quite proud of myself for not forgetting anything.
{sadly, this does not happen very often}

I really did want to deliver a chocolaty treat,
but I would have to get creative.

I LOVE a quick and easy treat that uses up what I already have in the pantry,
and this granola does not disappoint.

No baking required:)

Charlie didn’t even remember that he wanted cookies.

No Bake Chocolate Chocolate Chip Granola Bars

1 1/2 cup of rolled oats
1 1/2 cups of crisped rice cereal
1/4 cup of cocoa powder
1/2 tsp salt
1/4 cup of brown sugar
1/4 cup of honey
2 tbsp butter
1 tsp vanilla
1/4 cup of chocolate chips

combine the oats, rice cereal, cocoa powder, and salt
set this aside

in a small sauce pan combine the sugar, honey, and butter
cook over medium heat until everything has melted, and is just beginning to boil
add in the vanilla

pour the sugar/honey over the oats, and mix until everything is evenly coated
stir in the chocolate chips
{they will begin to melt}

press firmly into a lightly greased baking dish
{I used a smaller 7 x 11 rectangular dish; use a square to get thicker bars}

allow the granola to cool completely before cutting into bars

a sweet treat that’s better for them than cookies and candy bars

enjoy!

  18. These are cooling in the pan right now. Can’t wait to eat them. One thing to note – vanilla is in the ingredient list, but isn’t in the instructions. I assume it goes in with the butter, honey, and brown sugar mixture? That’s where I put it at least. :)
