Just when you thought the salted caramel craze was over
BAM
it’s back.
It all started with a bowl full of brown bananas
and a jar of salted caramel that I found when I was cleaning out the fridge.
I was under the impression that the kids had used it up making ice cream sundaes,
but I was pleasantly surprised,
and what was going to be plain old banana bread,
turned into a deliciously sweet
salted caramel banana bread.
If you have a full jar at home,
I suggest using more than 1/4 cup,
but that was all I had.
Still, it added a gorgeous ribbon of caramel that was swirled through the entire loaf.

Salted Caramel Banana Bread
3 ripe bananas
2 eggs {large – lightly beaten}
1 1/2 cups of flour
1/2 cup of almond meal
1/2 cup of sugar
1 tsp salt
1 tsp baking soda
1/4 – 1/2 cup of salted caramel sauce
make sure to grease your loaf pan well
{the caramel is sticky}
pre heat the oven to 350
mix together the bananas and the eggs
stir in the flour, almond meal,sugar, salt, and baking soda
pour half of the batter into the pan
swirl in the caramel
pour on the remaining batter
bake for about an hour
remove the loaf from the pan and cool on a rack
the perfect pick-me-up for a dreary day

Salted Caramel or any kind of caramel for that matter has a place in my heart and will never leave! I made a salted caramel banana bread a few weeks back and it was so delicious. I am sure yours was as well!
