Chocolate is not my favorite dessert.
Sure, a small square of dark chocolate with a glass of champagne is lovely,
chocolate covered berries are delish,
but other than that
I’m not a huge chocolate dessert eater.
My husband on the other hand is,
and because yesterday was Valentine’s Day,
I made
over the top
SERIOUSLY rich
chocolate pot de creme.
{ooh la la}
It sounds much fancier than it is,
but trust me, this desert does not disappoint.
The whipped cream was my favorite part,
but the chocolate lovers in the house ate the entire thing.
Chocolate Pot de Creme
6 ounces of dark chocolate chopped
1 cup of heavy cream
1 cup of whole milk
2 egg yolks {large}
1/3 cup of sugar
whisk together the yolks and the sugar
in a medium saucepan over med-high heat
combine the milk and the cream, heat until small bubbles appear along the edges
pour the milk over the chocolate, and whisk gently to melt the chocolate
slowly incorporate the egg/sugar mixture
return it to the saucepan and cook over med – med/high heat
until the custard thickens, coating the back of a wooden spoon
{this should take about 5 minutes}
stir often so that your custard won’t burn and stick to the bottom
{believe me it’s NOT fun, and burnt chocolate is NOT tasty}
after it thickens, pour into cups/dishes/jars – whatever you are going to use
cover
and let it sit in the fridge until you are ready to serve
{at least an hour}

I love pot de creme. But you’re right–it’s rich! I’ve made it in the oven, and I’ve seen recipes that don’t really cook it completely either.
I almost tried it “in the oven” but this was a far easier method -and easy is good:)
I am a chocoholic and I love chocolate pot de creme! The cream is one of my favorite parts too because it helps cut the strength of the chocolate flavor. You see I am a milk chocolate lover! And these pots can be SOO rich!
