Recently, the always adorable Ashton from Something Swanky
send me a bottle of Watkins caramel extract.
Can you believe I have NEVER used caramel extract before.
Sure, I buy vanilla by the keg full.
LOVE almond, lemon, even peppermint around the holidays.
NO caramel
I wasn’t even sure what to do with it at first.
Luckily, I’m knee deep in a chocolate caramel collection post.
Just looking at all of the ooey, gooey chocolate covered caramel was making my stomach growl
{and I had just eaten lunch}
I was REALLY wanting to make shortbread, but for some reason I wasn’t in the mood to bake.
{don’t tell the bread that is currently rising on my counter}
and then it hit me
sub in rice krispy treats for the shortbread
{hello…NO baking required}
a little melting
a little mixing
a little spreading
done
Chocolate Caramel Rice Krispy Treats
1 bag of mini marshmallows
3 tbsp butter
1 – 2 tsp caramel extract
6 cups of crisped rice cereal
1 bag of caramel bits {melted}
1 bag of chocolate chips {melted}
in a large pot melt the butter and the marshmallows
stir in the caramel extract and then the cereal
with wet hands {or wax paper}
press into a square baking dish
spread on the melted caramel, and place in the fridge until it hardens
top with the melted chocolate
allow the toppings to firm up before cutting
I put mine in the fridge because I was impatient and wanted one
NOW
HOWEVER…this makes them VERY difficult to cut
try to have a bit more patience than I

It´s like millionaire´s krispy treats, wonderful looking! I never used caramel extract either, but I bet it´s great for baking without the hassle of making it.
Ha, I can never cut straight. EVER. Even with a ruler! Those straight cutters are robot people.

Don’t feel bad, I NEVER cut straight. I am the woooorst cutter ever. Always have like, 2″x1″ pieces on the ends
and I used to draw perfectly symmetrical circles in art class, too! Haha. LOVE these krispies! I need to find me some of that caramel extract and start buying that by the keg full, too!

I am a huge huge huge RKTreats fan. Like I am a connoisseur. I mean I love them! and these with the caramel layer and so gooey…just perfection!
I always love a good rice krispie treat. I don’t think you can EVER go wrong with chocolate and caramel too. Oh and PS: I never cut straight either! The ones I show in my pictures are the best out of like 36 squares lol!
