Chia Seed Pancake Muffins

Our new school schedule has been going well,
except that this week Charlie has February break,
and Stella does not.

This means that I still need to get up
{early}
make breakfast, pack a snack,
and get out the door on time.

Then, when Charlie decides to grace me with his presence
{at about 10}
I get to make breakfast again.

Since I’m not all that keen on making pancakes
twice
I’m making pancake muffins.

One bowl,
quick to bake,
they can even be made ahead of time,
and warmed up in the morning.

Why haven’t I done this sooner.

I used my go-to pancake recipe
{with a little extra syrup in the batter}
and added chia seeds and chocolate covered power berries
{you really could add almost anything}

They bake right in muffin liners.

and…for whatever reason

pancakes are SO much more fun when you can dip and eat them with your hands:)

Chia Seed Pancake Muffins
1 1/4 cups of AP flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 1/4 cups of milk
1 egg
2 tbsp melted butter
2 tbsp maple syrup
1 tsp vanilla

whisk together the milk, egg, vanilla, syrup, and melted butter
combine all of the dry ingredients
pour the wet ingredients over the dry
whisk just until everything is combined
stir in 1/4 cup of chia seeds

pour batter evenly into 12 muffin liners
place 2 or 3 powerberries {or chocolate chips} on each one

bake @350 for 12 – 15 minutes
serve warm with maple syrup for dipping

    Just wait until Charlie is a teen! Then you will be smiling if he graces your presence in the daylight :) Teens give new meaning to breakfast for dinner :) That’s when reheating something delicious in the microwave is REALLY appreciated. These are a fantastic idea. Thanks!
