Christmas vacation is coming to an end.
I am looking forward to getting back into our regular routine,
but not the rushed weeknight dinners.
TOO many times I stand staring at my fridge at 5:00 wondering what to make for dinner.
That’s where the slow cooker comes in.
I love when I can throw a few simple ingredients into a pot,
go about my business for the day,
and then like magic, dinner appears.
My goal for the new year is to use my slow cooker more often, so that our weeknight meals are not as stressful.
First up ~
Balsamic Pork Tenderloin
1 – 2 pound pork tenderloin
1 tsp salt
1/2 tsp pepper
2 cloves of garlic {minced}
1 cup of water
1/2 cup of brown sugar
1/2 cup of balsamic vinegar
season the pork with the salt and pepper
place the tenderloin in the slow cooker with the garlic
combine the water, brown sugar and vinegar, and pour over the pork
cover and cook on low for 6 – 8 hours
allow to cool slightly
shred with two forks
I served this over rice with a veggie,
and everyone LOVED it!

Love this. We use our slow cooker several times a week. With 4 kids all getting home from school at different times in the afternoon (and no buses) I don’t have much time to prepare dinner. This looks delcious.
we don’t have buses either – and with after school activities – we are ALWAYS in the car when I should be making dinner.
