Salted Caramel Blondies

Last week my children received their report cards.

This means that we are already mid-way through this school year.

Unbelievable, it has simply flown right by.

and…if my memory is correct, I don’t think I have complained once all year about packing lunches.
Although, I am struggling a bit to find new ideas.

Especially snack ideas.

Granola bars have been done
and done again.

Cookies
been there

Brownies
been there too

things with frosting don’t seem to travel well with Charlie
{the kid’s backpack is a disaster}

Blondies are something that I don’t make often;
in fact, I have only made them once before.

It really doesn’t get much easier than a blondie.
{seriously – one bowl, they are that easy}
I was feeling a bit more creative, so I topped them with salted caramel sauce.
They are SO versatile, that you could add almost anything.

Even my chocolate eaters loved them,
and they weren’t very happy with my decision
{that is before they ate them}

I made my own caramel sauce
{recipe here}
but you certainly could use a jar.

Trader Joe’s has a wonderful fleur de sel caramel sauce.

Salted Caramel Blondies
~adapted from Smitten Kitchen

1 stick of butter {melted}
1 cup of brown sugar
1 egg
1 tsp vanilla
1/2 tsp salt
1 cup of AP flour

line an 8×8 pan with parchment
beat together the butter and sugar
add the egg and vanilla
stir in the salt and flour

pour into the pan
top with 1/2 cup of salted caramel
bake @350 for 20 minutes

cool and cut into squares
