Peanut Butter and Jelly Muffins

I LOVE peanut butter and jelly.

My kids do as well.

I realize that it is not the most nutritious breakfast or lunch,
but that doesn’t really stop us.

{we eat it with fruit if that helps}

These muffins are a great way to get the taste of a PB&J
in a proper breakfast food.

You all now how I like my muffins.
Grab and go baby!

they also make fun little lunch box snacks
{just to point out,I have not complained about making lunches at all this year}

That is progress people.

Breakfast, lunch, snack
it doesn’t matter.

Just make them.

PB&J muffins
adapted from Cooking Light

2 cups of flour
1/4 cup sugar
1/4 cup brown sugar
1 tbsp baking soda
1/2 tsp salt
1 1/4 cups of milk
1/3 cup of peanut butter
1 egg
2 tbsp melted butter
about 1/4 jam {I used a bit more}

combine together all of the dry ingredients
add the milk, peanut butter, egg, and melted butter

mix just until the ingredients are combined

line a muffin tin
scoop about 2 tbsp of batter in each cup
top with a bit of jam
and then top with the remaining batter

bake @400 for 20 minutes
cool, and
