Chocolate Cherry Breakfast Cookies

A few days ago,
Dorothy @ Crazy for Crust made these delicious banana breakfast cookies.

I have been thinking about breakfast cookies since then.

What’s not to  love.
It’s breakfast, the most important meal of the day.
There’s fruit involved, so it’s good for you,
and it’s a cookie.

With kids to feed, and school starting Monday,
if you tell them they get to eat cookies for breakfast, I’m pretty sure they will nominate you for Mother of the Year.

That, and they will actually eat their breakfast happily.

Not wanting to be a total copy cat,
I made my cookies chocolate.
I had a bag of dried cherries, so they went in as well.

Actually, these could be called everything but the kitchen sink cookies.
Whatever you want to call them, they were AMAZING!

If I wasn’t trying to lose a few {let me tell you after 40, BAD things happen to your body}
I probably would have eaten …let’s just say more than a servings worth and leave it at that.

Chocolate Cherry Breakfast Cookies

1/2 cup of flour
1/2 cup of oats
1/3 cup of cocoa powder
1/8 cup of ground flax seed {optional}
1/8 cup of chia seeds {also optional}
1 tsp cinnamon
1/2 tsp baking soda
1 small banana {mashed}
2 tbsp butter {softened}
1/4 cup of brown sugar
1/4 cup of melted coconut oil
1 egg
1/3 cup of dried cherries

Combine all of the dry ingredients {without the cherries}
and set aside

cream together the butter and the sugar
add in the egg and coconut oil
gradually add in the dry ingredients
mix just until everything is combined
stir in the cherries

scoop onto a lined baking sheet {2 tbsp size balls}
bake @350 for 12 minutes

allow to cool for about 2 minutes and then remove them from the sheet
