Pomegranate Seed Muffins

I know I’ve probably mentioned that our mornings can get a wee bit hectic.

Especially now that mornings are dark,
it is VERY difficult getting my kids up and dressed.

We get up at the same time everyday, but lately
the last few minutes before we hit the road
are totally insane.

Missing socks, missing shoes, lunchboxes and water bottles flying about.
I would never resort to having them eat breakfast in the car,
but we really need to pick up the pace of our morning routine,
cause this momma really doesn’t want to get up any earlier.

Unfortunately, Charlie does not consider it breakfast if it is not warm and cooked.
Cereal is out of the question.

My go to is either quick bread or muffins.
It’s been baked by me,so Charlie approves, and it’s a little bit  sweet, so Stella approves.

If the kids are happy, momma is happy,
and hopefully we can get out the door in one piece tomorrow.

Pomegranate Seed Muffins:

2 cups of flour
1 tbsp of baking powder
1/2 tsp salt
2 tbsp sugar
1 egg
1 cup of milk
1/4 cup of coconut oil {melted}
1 cup of pomegranate seeds
1/2 cup of chocolate covered pomegranate seeds {optional but definitely recommended}

line your muffin tins
and preheat the oven to 375

mix together the flour, baking powder, salt, and sugar
add the egg, oil, and milk
mix just until everything is combined
gently stir in the pomegranate seeds

spoon in to your prepared muffin tins
filling about 2/3

bake for 20 minutes
