When I was a kid,
the holidays were a HUGE deal.
I have a very large, and extremely close, family
with MANY aunts, uncles, and cousins.
We would gather at a different house,
every night,
for the entire week between Christmas
and New Years.
For us kids,
and there were A LOT of us,
it was magical.
It’s funny the little things that you remember looking back.
For example, my mother always would buy a large box of after dinner mints.
Only around holiday time, but I just knew that after dinner, and dessert, that little black box would be brought out.
I love mints, and I probably haven’t had any since I was a kid,
but I stumbled upon this recipe at How Sweet It Is,
and instantly I thought about our family holiday parties.
I tweaked her recipe just a bit,
but truly, these are the best mints I have ever had.
Homemade peppermint patties will definitely be gifted this year.
Enjoy!
Peppermint Patties:
2 cups of powdered sugar
1 1/2 tbsp butter {softened}
2 – 3 tbsp heavy cream
2 tsp peppermint extract
1/2 tsp vanilla
2 cups of dark chocolate chips
cream together the sugar
butter
extracts
and then the heavy cream
once everything is thoroughly combined and creamy,
form into 1 inch balls {I flattened mine a bit}
place them on a baking sheet lined with wax paper
and chill for at least 30 minutes {longer is better}
melt the chocolate chips
once the patties are chilled
coat them in the chocolate
and return to the fridge to harden
The peppermint patties are best when served slightly chilled:)
