Just like everyone else I’m sure,
we are in the THICK of holiday baking.
The amount of flour, sugar, and chocolate being used
is obscene.
I wouldn’t have it any other way.
I always enjoy baking, but there is just something special
about Christmas baking.
The house feels warm and cozy,
the smells are incredible,
and music is a must.
Lately, I’ve been making a lot of candy,
and even though the kids have not been complaining,
I don’t like to sugar them up for their teachers too much.
Today I compromised
all the flavors of the holiday
with a bit less sugar than a cookie
Chocolate Peppermint Bark Granola Bars:
2 cups of rolled oats
1/2 cup flour
1/2 cup of cocoa powder
1/2 cup of brown sugar
1/4 cup of maple syrup, agave, or honey
6 tbsp butter
1 peppermint bark baking bar
in a bowl combine the oats, flour, cocoa powder, and just a dash of salt
set aside
in a small saucepan
melt the butter, brown sugar, and syrup together
when the sugar has dissolved,
pour this over the oats
spread into a parchment lined square baking pan
bake @ 350 for 30 minutes
after they have cooled
melt the peppermint bark baking bar
and drizzle over the top
It’s not cookies or candy, but the kids LOVED them!
Enjoy
