Sweet Potato Tater Tots

I’ve admitted on more than one occasion
that I have a thing for fries.

I know they’re not good for me,
and I don’t eat them very often,
but I LOVE them,
and would eat them everyday
if I could.

My kids feel exactly the same way;
in fact, my daughter will only order fries
if we are eating out.

I also happen to enjoy sweet potato fries.

Well, the other night
I was out with friends,
and on the menu…

Sweet Potato Tater Tots
{and not on the kiddie menu }
I had to try them.

They were served with spicy ketchup,
and they were SO good!

Of course, I had to try and recreate them at home.

They involve a bit of work,
but are definitely worth it.

Sweet Potato Tater Tots:
 1 sweet potato per person {any variety}
1 tbsp potato or corn starch
mild tasting oil for frying
salt

peel the sweet potatoes
grate {I used my food processor to save time}
heat just a small amount of oil in a skillet
cook grated potatoes just until they become slightly browned and “soft”
remove them from the skillet,  add the starch and salt to taste, and mix well

meanwhile heat about 2 inches of oil in a shallow pot {med-high heat}
 when the potatoes have cooled enough to handle
shape into balls or the traditional  tube shape
fry 3 – 4 at a time
if the oil is hot enough – they will fry quickly
{taking only a few minutes}
drain on a brown bag

They are delicious served with spicy ketchup.
