Oatmeal Chia Seed Cookies with Dark Chocolate Covered Pomegranate Seeds

Have you made anything with chia seeds?

I hadn’t until today.

Rumor has it they’re good for you.
Fiber, protein, Omega – 3
These little guys have them all,
and in  BIG way.

I decided it was time to give them a try,
but truthfully, I wasn’t sure what to expect.

Things that are good for you
don’t always taste very good;
I bet you didn’t know that :)

These cookies are different.

They are delicious,
and they’re healthy,
but I’m not telling my kids that.

Oatmeal Chia Seed Cookies with Dark Chocolate Covered Pomegranate Seeds
1 cup of oats
1 cup of AP flour
1/2 cup of brown sugar
1/4 cup of butter
2 eggs
1 tbsp chia seeds
1 tsp baking powder
1 tsp vanilla
1/2 tsp salt

combine the dry ingredients together {set aside}
in the bowl of mixer cream together the butter and the sugar
add the eggs {1 at a time}
next add the vanilla
with the mixer on low add in the dry ingredients
gently fold in 1/2 cup of chocolate covered pomegranate seeds

{raisins or chocolate chips would be great as well}

using a tablespoon, scoop onto a parchment lined baking sheet
bake @350 for 10 minutes
cool on a wire rack

These are my new favorite cookie for sure!

  6. Chia seeds are amazing. I have them almost every day in my smoothie. It will be nice to have another healthy alternative to using them. Gotta have those dark chocolate covered pomegranate seeds!
