Mint Chocolate Chocolate Chip Cookies

I had absolutely no intention of taking a blogging break this week.
In fact, I had a BIG list of all the baking I was going to accomplish.

We were home from school, so there wouldn’t be any interruption mid-afternoon.
No carpooling or sports.

Just some well deserved down time and quality time in the kitchen.
SO…of course I  get sick.

The –  in bed all day for most of the week – kind of sick.

I’m feeling almost good today, and these cookies are the first thing I have been able to smell for a week:)

Mint Chocolate Chocolate Chip Cookies:
2 sticks of butter softened
3/4 cup of sugar
3/4 cup of brown sugar
2 eggs
1 tsp peppermint extract
1 tsp baking soda
1/2 tsp salt
1/2 cup of cocoa powder
1 3/4 cup flour
2 cups of chocolate chips

pre-heat the oven to 375
combine the flour, cocoa powder,  baking soda, and salt in a separate bowl
cream together the butter and sugars
scrape the bowl and add the eggs one at a time
add the peppermint extract
gradually add in the flour mixture
gently stir in the chips

scoop 1 tbsp drops onto a parchment lined baking sheet
bake for 8 – 10 minutes

For me peppermint is to Christmas what cinnamon is to all things fall…
they just belong together
