{copycat} Apple Pie larabar

We are on candy overload
and the holiday season hasn’t even officially begun.

I was planning a mini-cleanse
just to get me ready for the feast that spans
from Thanksgiving
through New Years.

However, I noticed that Dorothy @ Crazy for Crust
is celebrating with 2 weeks of pie.

You know how I feel about pie.

How could I possibly cleanse with all that pie to look at
drool over
dream about.

Unfortunately, I don’t think my yoga pants will
expand indefinitely
so I need to keep my consumption in check.

I still want pie though.

and then I remembered
larabar apple pie bars were really good
almost as good as eating pie
and they’re healthy

and… I know how to make them
I’ve already made the brownie bar.

Now, I know for a fact that pie is in my future,
but these will hold me over for a bit.

apple pie larabars:
1 1/2 cup of raw slivered almonds
1 1/2 cup of pitted dates
1 small cored/peeled apple
1 tsp apple pie spice

in a food processor
pulse the almonds until you have  almond meal
next add in the dates
pulse a few times
add in the apple

the mixture will be very thick
pulse until everything is well combined
add in the spice and pulse a few more times

form into a square and wrap in plastic
chill until firm
{these will not be as hard as the brownie bars – because of the liquid from the apple}
if you want a drier bar – use dried apple bits instead

makes about 10 bars

  4. I am just starting to experiment with dessert/snack bar recipes. This looks really good. I think I would prefer it to real apple pie!

  5. I keep thinking I will do some sort of veggie diet or juice cleanse…then I wake up and realize my sweet tooth just won’t let me. Plus with every good thing everyone is posting now…I would just be setting myself up to fail:-) Must get more yoga pants or make some healthy bars like these awesome ones:-)
