Chocolate Peppermint Loaf Cake

mint chocolate loaf cake

It is safe to say
that today
has been
the
worst
Monday
in
history

Sure, it started fine
up on time
kids to school
and from there
it has been one disaster after another.

In case you haven’t noticed
almost ALL of my blog pictures
are G O N E

poof
disappeared

The smart thing would have been to back up the blog
I know this,
that doesn’t meant that I did it.

Believe me, I have learned my lesson.

I see a lot of re-takes in my future:)

Until then most of my posts will be pictureless,
but…
I made cake,
and cake always makes it all better.

Chocolate Peppermint Loaf Cake:
This is basically a chocolate loaf cake
{this is the recipe that I use}
in place of the vanilla I use peppermint extract
also, I added the chips {about 1/2 cup}  in the cake – and not for decoration (as in the recipe)

Then, I topped it with peppermint glaze
{1 cup of powdered sugar – 1 tsp peppermint extract, and about 2 tbsp of cream}
mix and drizzle after the cake has cooled

I ‘d rather have pictures on my blog, but the cake was yummy.

Enjoy!

NOOOOO! I’m SO sorry, Heather! That’s awful and so crappy, and I definitely feel heartache-y for you because I know I’d FLIP my you-know-what if something happened to my pics, too! In the meantime, at least you have this loaf cake to nosh on while you decompress. It looks amazing!

Oh my gosh, that is the worst thing that could happen. I hope you have figured out how to get them back by now? It’s hard to remember to back up your blog until you have a scare of something. I bet you have done it now? Good luck with everything and your cake sounds amazing.
