When Ian and I were first married, we had the best apartment.
It was a gorgeous Spanish style building from the 1920′s.
Not only did I love the apartment, but it was on a great street.
There was great shopping, dining, and I could even walk to Whole Foods.
BC {before children} we ate out quite a bit.
One of our favorite local spots was a brewery/wood fired pizza joint.
Every fall, I looked forward to the addition of the wheat-berry salad to the menu.
I can’t remember exactly what they put into their salad {this is what happens after children}, but it was my favorite.
So…when I spotted the bulk wheat berries at Whole Foods, I thought I would try and recreate it.
Much to my surprise the kids LOVED it as much as I did!
Wheat-Berry Salad with Pear and Berries
1 cup of wheat berries
3 cups of water
arugula (or mixed greens)
goat cheese
1 pear thinly sliced
1 cup of berries
olive oil and balsamic vinegar for drizzling
salt
cook one cup of wheat berries in 3 cups of water
bring to a boil, cover and simmer for 45 minutes
drain
top arugula with the wheat berries
add the berries and pear
top with crumbled goat cheese (about 1 ounce)
drizzle the oil and vinegar over the top ( I used just a small amount of each - probably less than 1 tablespoon)
season with salt to taste
