As it turns out,
today is National Pumpkin Day
and
National Greasy Food Day
Seriously
Who makes this stuff up
I could always go for french fries
they are my #1
hands down
guiltiest of guilty pleasures
I LOVE fries
BUT…
this has been quite a week
and not all in a bad way
it was busy
not only did Online BlogCon begin on Monday
which, by the way, was beyond fabulous
a new session of classes began for me as well
and I have A LOT of students this session
and I got a migraine
a bad one
and we had basketball three times this week
Fries would have to wait
I needed chocolate
so I whipped up some chocolate toffee cookies
sigh of relief
it’s Friday
we have a fun – filled weekend planned
and I have chocolate
all is well
Chocolate Toffee Cookies:
2/3 cup of cocoa powder
1/2 cup of butter
1/2 cup of sugar
1/2 cup of brown sugar
2 eggs
1 tsp vanilla
1 1/2 cups of flour
1/2 tsp baking powder
1/4 tsp salt
chopped toffee bits {about 1/2 cup}
cream together the butter and sugars
add in the vanilla and eggs
scraping the bowl after each addition
sift together, and then add the dry ingredients
finally add in the toffee bits {my toffee also had nuts}
scoop by the tablespoon onto a parchment lined baking sheet
bake @350 for about 10 minutes
cool on a wire rack

Heather, these cookies look so good. And I think we celebrated National Greasy Food day early in style–those Urban fries on Saturday were SO dreamy!! And so are these cookies. Hubba, hubba!!
I, too, have a weakness for French Fries! My go to “naughty” food. And these cookies… holy moly. I’m thinking they need to happen in my kithen very soon.

Who does come up with these crazy holidays? Although I’m all for a big plate of cheese fries:-) And a big plate of these awesome looking cookies…I adore toffee in cookies!!!
