Chocolate, Peanut Butter Banana Muffins with Chocolate Streusel

For years, when my kids were babies, I BEGGED them to sleep in.
My son was the worst; often up before  5 am.

When you are a stay at home mom, and you are up before dawn, the days are SO VERY LOOOONG.

Well, those days have come and gone, and now I’d have an easier time waking the dead than getting them up for school each morning.

I really appreciate this on the weekend, but it makes school mornings a bit rushed.
So, I need to make breakfast as grab and go as I can.

Today, even cereal was too  time consuming for my daughter that decided to wait until 7:15 to show up at the table.

Muffins seem to fit the bill, and if you can limit the sugar, they really are a good choice for busy mornings.

These may be the BEST muffins I have ever had.

Chocolate, Peanut Butter, Banana Muffins with Chocolate Streusel Topping:
For the Muffins
2 ripe mashed bananas
1/4 cup of softened butter
1/4 cup of brown sugar
1 cup of flour
1/4 cup of cocoa powder
1/4 cup of natural peanut butter
1 egg
1 tsp baking powder
1 tsp vanilla
1/2 tsp salt

cream together the butter and brown sugar
add in the banana, egg, and vanilla
add the flour, cocoa powder, baking powder, and salt
mix just until combined

Spoon the batter into paper lined muffin cups

Streusel Topping:
Combine 1/3 cup brown sugar
1/4 cup of flour
and 1/4 cup of cocoa powder
cut in 1/4 cup butter

Spoon this evenly over the muffins

Bake @350 for 20 minutes

These may even get them up on time:)

I made a chocolate banana muffin recently but adding PB to the mix kind of sounds better now in retrospect! I love the chocolate streusel too. I like a TON of streusel with my muffins. It’s the best part. These look and sound heavenly!

  10. Heather I’m with you on the early riser. My son was up between 5:00 – 6:00 am until he hit about 12. Now he sleeps in on the weekends and I have to wake him on school days (like you said waking the dead, lol).
