I’m going to keep this very simple.
MAKE
THESE
CUPCAKES
They are really that good.
Seriously good.
I’m never going to fit into my jeans and I don’t really care good.
Keep in mind…I don’t like cake
or frosting
I was eating this frosting with a spoon,
yep
right from the bowl.
Not proud, but I did it, and I’m going back for more.
I’m not saying this because I made the frosting, BUT…
it is the BEST frosting I have ever tasted.
Yes, I did say so myself:)
For the cupcakes:
1 cup of sugar
1 egg
1/4 cup of softened butter
1 cup of flour
1 tsp vanilla
1 tsp apple pie spice
1/2 tsp baking powder
1/2 tsp salt
2 finely chopped apples
combine the flour, salt, baking powder, spice
cream together the butter and sugar
add in the egg and vanilla
mix in the flour
fold in the apples
bake in liners @350 for about 20 minutes
makes 12 cupcakes
cool completely before frosting
Salted Caramel Frosting:
2 sticks of butter
8 ounces of cream cheese
2 cups of powdered sugar
1/2 cup of caramel sauce (homemade salted caramel recipe here)
cream together the butter and cream cheese
add in the caramel and powdered sugar
blend well
once cool frost the cupcakes
Break out those yoga pants.
Enjoy!
















Thank goodness I own enough yoga pants to sustain never having gone to yoga! I die over that frosting! Yum.

Okay, I made the batter and it looks more like you’re making muffins than cake batter. It’s much thicker and I am worried I over stirred it. I added a couple ingredients to boost the moisture levels in the batter in my fear of it being to coarse and chewy like some (overstirred muffins) I have tried. but I am finishing up my first batch of Cupcakes as I type and I will let you know the verdict…

Overall the flavor is nice. spicey and earthy bread compliment the rich and decadent icing. When applying the Icing remember LESS IS MORE! I even whipped my icing so that it would be lighter and not as thick. I think I added too much of a moisture boosting, and caused too much gluten to form, which resulted in a light crust on the top of the cupcake. they really did turn out just like muffins. which is interesting. There is so much potential in these cupcakes and overall the flavor is heavenly. I just need to work on tweaking it a little more to get the consistency I like.
