{very} Vanilla Granola

I lovingly refer to my daughter as the fussy one.

She wasn’t always this way.
I used to be so proud of my veggie eater.
She would actually get excited when she saw you reach for the peas.

Now, I have to bribe her with the promise of dessert just to get a bite of something in.
Meat …never
Eggs…nope
Vegetables…not unless it’s COVERED in ranch, and then only carrots and broccoli on occasion

Her diet consists of:
berries
yogurt
granola
and fries

Seriously, that’s pretty much it.
Unless you include sweets:)

She eats yogurt and granola everyday – sometimes for breakfast and lunch.
She’d eat it for dinner as well if I allowed it.
I’m such a MEAN mommy.

This is the reason I started making my own yogurt.
I couldn’t afford not to.

Granola is also a wee bit pricey, and a lot if it is not all that healthy.
So now we are making that as well.

Stella prefers it plain – and then she adds fruit with the yogurt.
This is a very basic vanilla granola, and would be great with dried fruit of any kind.

Vanilla Granola:
2 1/2 cups of oats
1 cup of almond meal (or slivered almonds)
1/4 cup of coconut oil
melted with 1/4 cup of brown sugar and 2 tbsp of honey
2 tsp vanilla

combine the oil, brown sugar, and honey
melt and stir in the vanilla
pour over the oats and almonds
combine well

Bake on a lined cookie sheet @300 for 30 minutes
stir and continue baking another 15-30 minutes until toasted

cool completely before storing in an airtight container

I still am not going to let Stella eat granola for all three meals, but at least I feel better about the granola she’s eating.

  1. I love this – I’ll have to try it. I love granola but refuse to pay the high price for it! I have all those ingredients already in my pantry! And my kid is the same way, although yours runs more to the healthy. Mine would live on nuggets if I allowed it!

  4. Stella’s breakfast is a lot like mine–I love my yogurt, berries and granola every morning! In fact, I look forward to it each night :) this homemade granola looks so easy and a lot cheaper than what I’ve been buying. Plus, can you resist those huge hunks of granola clusters? I think not!

  6. I’m finding myself putting ketchup on my 3-year-old niece’s baked chicken nuggets so she’ll eat them. But, fruit she’ll always eat!
