Reese Inspired {Peanut Butter Cup} Cookies

You’re probably tired of listening to me talk about lunch packing.
But when you’ve got two kids, and one is seriously picky,
and you’re expected to feed them on a regular basis, this is not an easy task.

Cleaning,cooking, laundry, shopping, these I can do.
Homework and carpool, bring it on.

Lunches cause me stress.

This year I have vowed to win my daily struggle, and I will be planning ahead.
I will make something my kids will enjoy, and I won’t be packing yogurt and granola every day for a month.

These cookies will be making an appearance on Thursday afternoon,
that is if they last that long:)

Move over Oreo

Peanut Butter filled Chocolate Cookies:
For the peanut center combine 3/4 cup of peanut butter and 3/4 cup of powdered sugar
roll into 1 tsp balls and freeze for an hour

For the chocolate cookie:
cream together 1/2 cup butter with 1/2 cup of brown sugar
add 1 tsp of vanilla and 1 egg
1/2 cup of cocoa and 1 1/4 cups of AP flour

form 1 tbsp balls
flatten into discs
fill each with a pb ball
gently press the balls closed

bake@350 for about 9 – 10 minutes

some I rolled in raw sugar
totally not necessary

hope I have a few left for lunches:)

  4. Peanut butter cup filled chocolate cookies? My kids would be so excited if they found these in their lunch boxes! And you aren’t alone in the lunch box stress…I always think about it too! I don’t like sending the same thing all the time!!!
