This is how our day begins…
Mom – Good morning Charlie
Charlie – What’s for breakfast?
Mom - insert a variety of answers...pancakes, waffles, eggs, bagel sandwich
Charlie – pulling the covers over his head…AGAIN
as if I’m supposed to create a new, original, masterpiece every morning
the pressure
today I delivered
pancakes that not only look like (well sort of – there is a hole in the middle) doughnuts,
but taste like them as well
covered in a maple glazed syrup
good morning
For the pancakes:
1 cup of flour
1 egg
3/4 – 1 cup of milk (this works best if the batter is thick)
1 tsp of baking powder
2 tbsp melted butter
1 tbsp of sugar
1/2 tsp salt
1/4 – 1/2 tsp nutmeg (depending on your personal taste) we LOVE nutmeg
I also added a few sprinkles:)
combine the dry ingredients
whisk together the milk, egg, and butter
pour over the dry ingredients
whisk until everything is combined
heat griddle to 350degrees
butter generously (this gives the taste/texture of a fried cake doughnut)
using a pastry bag or ziploc with the tip cut off, squeeze batter out into a circle (leaving a hole in the middle)
flip
keep warm in a 200 degree oven while you make the syrup
Glaze Syrup:
1/2 cup of powdered sugar
2 tbsp of melted butter
2 tbsp of milk or cream
1 tsp maple syrup
mix ingredients well
and drizzle over pancakes
this is sure to get the kids out of bed in a hurry:)
