Zucchini Pasta Noodles

I don’t typically get caught up in the latest diet craze.

There’s always something…
Atkins
South Beach
Clean Eating (have we all been dirty?)
and now the Paleo Diet is all over the internet.

My mom passed on a recipe for zucchini noodles (part of the Paleo diet), and since I have been moving the scale in the incorrect direction, cutting out a few carbs may not be such a bad idea.

More room for dessert then if you’re a glass half full gal.

We are BIG pasta lovers.  My husband could eat it everyday.  It’s so easy and versatile, and makes an appearance at our table at least once a week.

The raw zucchini salad I made a few weeks ago was so delicious, that I thought zucchini pasta could be a great substitute. 

I chose a spicy tomato and roasted red pepper sauce to serve, and of course you have to have Parmesan, and while it does not taste like pasta, it was delicious.

We will be making this again for sure.

For the noodles:
use 1 zucchini per person
using a mandoline  or grater (use long strides) thinly slice the zucchini into noodles
saute in 1-2 tbp of olive oil and 1 glove of minced garlic
 ~ you could also boil the noodles
making sure not to overcook the zucchini

top with your favorite sauce and a bit of Parmesan

I went ahead and had a mini guilt-free cheesecake for dessert:)
