Each week I try and prepare at least one frugal meal.
My go-to in the fall and winter is soup, and in the summer I LOVE a good salad.
Often, we will use any leftover potatoes, veggies, or meats from meals earlier in the week.
This makes it a super cheap meal because I always have lettuce of some kind in the fridge.
It seems like years since I’ve been to the market, really it’s only been 2 weeks, but our fridge and pantry are pretty sad looking.
As usual, there is chicken in the freezer. Because I have kids, there is never a shortage of peanut butter in the pantry. Currently the only veggies in the house are romaine and carrots.
Thai style Chicken Salad it is.
For the salad:
2 cooked chicken breasts (seasoned with salt, pepper, and just a bit of garlic and ginger) sliced
salad greens (most varieties will do) I used 2 heads of romaine to serve the four of us
1 shredded carrot
1 cup of mandarin orange segments (drained if using canned)
a sprinkle of won ton crisps

Delicious, very frugal, and great for those warm summer nights.
