Peanut Butter Cup Ice Cream Pies

Certain things just belong together.
 pork chops and applesauce
 peas and carrots
 macaroni and cheese
 chocolate and peanut butter
 summer and ice cream

I have an ice cream maker, but had been wanting to try the 2 ingredient variety sweeping the web.
I prefer vanilla to chocolate, but peanut butter is where it’s at.

SO…when I saw that Dorothy over at Crazy for Crust made peanut butter ice cream I was all in!

I made a quick {no-bake} oreo crust

pressed it into my mini tart pans

filled it with  the peanut butter cup ice cream

and topped it all off with chocolate ganache

I know, and you are so welcome!

For the ice cream:
2 cups of heavy cream
1 can of sweetened condensed milk
1 tsp of vanilla
1/2 cup of peanut butter
1/2 cup of mini peanut butter cups (roughly chopped)

whip the cream and gently fold in the milk and vanilla
add the peanut butter and the peanut butter cups

freeze  while you make the crust

For the crust:
20 Oreo cookies
1/4 cup of melted butter

process the cookies to fine crumbs
combine with the butter
press into your pie or mini tart pans

chill for about 30 minutes (just to set the crust)

fill the crust with the ice cream
~two scoops each if you are making the minis

freeze until firm

Ganache:
1/2 cup of heavy cream
1 cup of  chocolate finely chopped

heat the cream until tiny bubbles appear on the surface
pour over the chocolates
let sit for about 30 seconds
gently whisk – beginning in the center – until the chocolate is smooth

pour the ganache over the pies and freeze until ready to serve

I really love individual serving desserts…no cutting:)
