peach {Bellini} popsicles

Summer is FLYING by.
Even though I am not a big fan of extreme heat, I am really not ready for our busy fall school schedule to begin.

I am going to try and pack as much fun as possible into our remaining vacation time,
beginning with one of my favorite summer cocktails – the Bellini.

Every night after the kids are in bed my husband and I head out to the deck.  We light a few candles, and simply enjoy the quiet time together.

Yesterday,  I made Bellini popsicles to make the night just that much better.

For the Bellini:
1/4 cup peach puree for each glass
Prosecco

add the 1/4 cup peach puree to each glass

fill with prosecco
freeze until firm
add sticks (straws in my case)
freeze (at least 4 hours)

They begin to melt pretty quickly, making it more of a slushy after a few minutes,

but they were tasty, and on a beautiful evening, what more could I ask for.

  8. Talk about a “mother’s little helper” who would ever guess you were getting a calming dose of wine in your popsicle. Big Bellini fan, I even hung out at in my youth at the famed Cipriani’s restaurant in NYC which made the drink so popular in Manhattan.
