Bacon Wrapped {blue-cheese stuffed} Buffalo Chicken

A bit long for a title I know, but each a VERY important part of this recipe.

Let’s be honest, chicken can be a bit dull.
It always seems to be the “go-to” dinner.
I always have it at home (I’m sure you do as well), but rarely have a plan for what I’m going to do with it.
At least it’s grill season.  Baked chicken just never seems to taste as good.

Recently, my son discovered he enjoys Buffalo Wings.

However, if you are  not eating these wings in Buffalo, you absolutely should not call them Buffalo Wings. Very  few can even come close to the original.

Yes, I am from Buffalo, and yes, I am a wing snob.

My husband and I love spicy food, and now that one of the kids is on board, I decided to try grilled Buffalo chicken breasts.
   easier to eat than wings, and MUCH healthier


But…in Buffalo, you cannot eat your wings without blue cheese.
So…I sliced open the breasts and stuffed them with blue cheese.

Because my daughter is quite fussy, I knew the only way to get her to eat at least a bit of the chicken was to wrap it in bacon.

That is what I did, and boy am I glad I did it.
Everything tastes better with bacon.

Definitely NOT another dull chicken dinner.

Bacon Wrapped, Blue-Cheese Stuffed, Buffalo Chicken:
4 chicken breasts
4 slices of bacon
4 ounces of crumbled blue cheese
Frank’s Buffalo Wing Hot Sauce

Marinade the chicken in the sauce for at least an hour (mine was closer to 4 hours)
Slice the fat end of the breast to create a pocket
Stuff with about an ounce of cheese
Wrap with bacon
Secure the pocket and bacon with picks
Season with just a bit of sea salt
Grill until the chicken is no longer pink
20-30 minutes depending on the size of the breasts
