I’ve been trying to come up with a few really good non-dairy desserts for a good friend of mine.
Since dairy and I are seriously best buds, I was initially at a loss.
No milk.
No cream.
No cheese.
No butter.
No ideas {at first}
But then Ashton @Something Swanky made a fabulous chocolate rice pudding.
There may be dairy in her delicious pudding, but I could try it with my favorite non-dairy dairy food…coconut milk.
This stuff is so good I could drink it with a straw.
I often use coconut milk to make rice for curry, why not try a sweet version.
I also cannot ever use anything coconut without the ..sometimes you feel like a nut song popping into my head.
That is how almond joy rice pudding came to be.
While it is heaven in a bowl, it was just as heavenly without the “extras”.

Almond Joy Rice Pudding:
3/8 cup rice
1 1/4 cup water
2 1/2 cups of coconut milk
1/4 cup sugar
1 tsp vanilla (or almond) extract
dash of salt
combine the rice, salt and water in a saucepan
bring to a boil and simmer 5 – 7 minutes until the water has almost completely evaporated
stir in the milk, sugar, and vanilla
simmer over med-low (stir often) for 20-25 minutes
~mixture will be very creamy and the rice soft
cool
I topped mine with a bit of whipped cream (can use non-dairy) chocolate sauce, and crushed almonds

Yum! I make rice pudding with milk-substitutes as well. Coconut milk is one of my favourites. Almond milk also works well (no need to add almond extract).
