S’more Ice-Cream Sandwich

Yes, I know…I did say no more s’more recipes.

It’s summer, I cannot help it; my kids have s’mores on the brain.
Who can blame them? Chocolate, marshmallow, graham crackers,and summer just go together.

This is a twist on the classic summer favorite and another classic – the ice-cream sandwich.

Start with your favorite graham cracker recipe (here’s mine)
roll them a bit thicker
cut into circles

bake @350 for 15 minutes (you do not want hockey pucks for your sandwich)

Chocolate marshmallow ice cream: ( I made just enough for 4 sandwiches)

combine 8 tsp of cocoa powder with 1 cup of half and half
whisk in 4 tbsp of agave (or sugar)
and 1/2 tsp of vanilla
make sure it is well mixed

freeze according to your ice-cream maker’s instructions

when it is starting to thicken add in a few tbsp of mini-marshmallows (I cut mine in quarters)

freeze until you are ready to make the sandwiches

To assemble: (pretty straightforward)

place a scoop (or two) on top of one cookie

top with another cookie
roll in a few tbsp of mini-chips

  4. I sooo need an ice cream maker! How I have survived this long without one, I have no idea. When I can get one, I have no idea, but I need it, its just that simple:). Cool recipe too!!!
