PB cup {stuffed} Chocolate Chip Cookies

Today is our first full day of summer break:)

It’s also 100 degrees – major YUCK

I love summer, but extreme heat is NOT my thing!

Being stuck indoors, I figured why not bake.

We spent the morning (well more like early afternoon) at Target.

Who knew that pretty much every candy bar now comes in minis.
 ~ too cute

I couldn’t resist the urge.

My plain, ordinary, chocolate chip cookies are now kicked up peanut butter cup stuffed chocolate chip cookies.

These are SERIOUS cookies!

Start with your favorite chocolate chip cookie recipe
~here is mine:
Combine 2 1/4 cups of flour with 1 tsp baking soda and 1/2 tsp salt – set aside
Cream together 2 sticks of butter with 3/4 cup sugar and 3/4 cup of brown sugar
add in 2 eggs and 2 tsp of vanilla
gradually add in the dry ingredients and a bag of chocolate chips

pre-heat the oven to 375
line a baking sheet with parchment paper

Drop by 2 tbsp (BIG cookies) onto the lined sheet

press 1 mini pb cup into the center of each

top with 1 tbsp of cookie dough

chill for about 15 minutes (to prevent them from running together)

bake for 15 – 17 minutes
cool
eat (I dare you to eat more than one –  my son’s friend ate 2 in about a minute and a half: )

Enjoy!
