I know you are probably thinking…pasta salad with fruit…what?
Trust me, I would have thought the same thing, but then I saw this recipe at doughmesstic
In my opinion, she is brilliant. Her salad looked so amazing, that I had to give it a try.
Because it is almost the Fourth of July, I decided to go with red, white, and blue fruit.
I wanted to make a poppy-seed sweet dressing, but the fussy one prefers raspberry vinaigrette.
It did not disappoint. This salad would make a fantastic summer lunch, light dinner, or perfect side dish to anything BBQ.
Most importantly…the fussy one ate it!
For the salad:
1 lb pasta cooked according to directions
drain and cool
add dressing (we loved the raspberry but poppy-seed would also be great) to the pasta
I did not measure an exact amount, but added just enough so that the pasta was not dry
add 1 peeled and diced apple
2-3 cups of mixed berries
dash of salt/pepper (optional)
I also added just a sprinkle of Parmesan to counter the sweetness
Seriously – it was GOOD:)
