Howdy!
We’re going cowboy today.
Tonight our family is headed to the rodeo. I’m really excited.
In the spirit of all things cowboy, I wanted to make a breakfast fit for a cattle (or chicken as in our case) rustler.
I headed to the queen of cowboy cooking
all hail Ree Drummond
for inspiration.
Breakfast pizza…yes please.
Now I need to find a proper hat.
Recipe adapted from The Pioneer Woman
Food from my Frontier
For the pizza:
1 package of biscuits
1/2 pound of bacon
1 package of frozen hash browns
1/4 – 1/2 cup of salsa
6 ounces of sliced cheddar
6-8 eggs
salt and pepper
pre-heat the oven to 450
place bacon on a baking sheet and cook until browned but not crispy
dice bacon
warm 3 tbsp oil or butter in a skillet over medium high heat
place frozen hash-browns in skillet, and cook until they begin to brown
set aside
lightly grease a pizza pan
gently press together the biscuits
cover with salsa
add cheese
potatoes
bacon
crack the eggs evenly over the top of the pizza
sprinkle with salt and pepper
bake for about 15 minutes (depending on how you like your eggs cooked)
