Vanilla Bean Cake-Roll turned Strawberry Shortcake

Every Christmas I plan on making a Buche de Noel.

Every year I chicken out.

How does one roll a cake without it cracking.

I was happy to see that even smitten kitchen had the same issues.
 ~it’s always nice to know you’re not the only one with kitchen mishaps

Then, I saw Nigella make one, and it looked so easy.

Parchment and butter a jelly roll pan – check
Make vanilla bean cake (I cheated and used Traders Joe’s box mix) – check
Bake @350 for about 20 minutes – check
IMMEDIATELY remove form the oven and roll in a clean kitchen towel – check
   Oh my goodness it was actually working

Let cool and unroll so that you can fill it with whipped cream
 ~2 cups of heavy cream whipped with 1 tsp vanilla

Trouble in kitchen paradise

While my cake rolled so easily
It did not enjoy begin unrolled as much and I got cracks

This was my biggest worry, and you know what…
It’s not that big of a deal.

I pieced it together
Spread on the whipped cream
Rolled it back up

not pretty but so delicious

and then I topped it with berries from the garden

I got my strawberry shortcake after all:)
