I use the word muffin loosely.
These muffins are definitely more of a cup cake minus the frosting.
While I am quite tired of the s’mores theme, I was in need of a lunch box/after school treat.
I really was not wanting to head to the market, so I needed to use what I already had.
S’mores muffins it is.
With only a handful of ingredients these went together in less than 5 minutes, and I know the kiddos will gobble them up.
For the muffins:
Combine 2 1/2 cups of graham cracker crumbs with 2 tsp of baking powder
Stir in 1 egg, 1 cup of milk, and 1/3 cup of honey
Fold in 1/2 cup of chocolate chips and 1/2 cup of mini marshmallows
Fill muffin liners 2/3 full
Bake at 400F for 15 minutes
~they smell delicious
I promise this is my LAST s’more recipe {at least for now}

What a great idea! I’ve seen endless advertisements selling chocolate, marshmallows and graham crackers altogether, and now I have an itching to make s’mores!
