This week’s french friday’s with Dorie recipe was Garlic and Herb Cheese.
The most difficult part of this recipe was finding a proper substitute for the fromage blanc - which I could NOT find anywhere.
I do not care for ricotta. Goat cheese seemed to be too strong, so I decided to take a BIG leap and went with Mascarpone.
Delicious – but what do I know.
I also thought that crackers would make a nice addition, and I have been meaning to try a thin wheat cracker recipe I found..
I may never buy crackers again.
With the cheese, some tomatoes, and just a bit of prosciutto – I’m a VERY happy lady.
Hopefully, I can save some for my hub and kids.
For the crackers:
1 1/4 cup whole wheat flour
1/2 tsp salt
4 tbsp butter
combine the flour and salt – and then cut in the butter
add 1 tbsp agave (honey would also be good)
1/4 cup of milk (you may need to add an extra tbsp if too dry)
and 1 tsp vanilla
mix until just combined
roll out to about 1/4 – 1/8 inch
cut using a pizza cutter
bake on a parchment lined sheet @400F for 8 minutes
I flipped mine after four minutes so that they would brown evenly
watch them carefully they will burn

Homemade crackers – I have never made crackers myself but I am sure that your recipe is one I should try in the near future – sure looks amazing and delicious. Very nice idea.

What a great idea to sub mascarpone, Heather. I bet it was wonderful and it sure looks beautiful. I have never made crackers, but you make it sound so easy. We feel the same way about tortillas – now that we have made them ourselves we don’t want to buy store bought! Have a wonderful weekend!

The mascarpone sounds like a wonderful base. The crackers look like something to try. I’ve never made my own, but those look very nice. I’ll bet they’d also be tasty with seeds sprinkled on top. Nice job, Heather.
