I’m a planner.
I usually have a plan.
My plans do not usually work out as planned.
I planned on making my tarts yesterday.
I had my chocolate, my bananas…
but I made nutella fudge pops instead, and then it was time for dinner.
I planned on making them first thing this morning, but this time a migraine got in my way.
So…here I am fashionably late yet again.
At least it’s still Friday:)
While caramelized bananas sound divine, we are not big banana fans, so I opted to pass on the banana topping for this tart.
I also chose to make my mini tarts using the chocolate shortbread cookie dough.
After processing together the cocoa, flour, sugar, butter, and egg yolk, my dough looked like this
I was not sure how it would come together, but it pressed into the shells easily.
Caramelized bananas smell wonderful!
Top it all with chocolate ganache
Chill for a bit,
and it’s the perfect ending to a fun-filled week.

You were smart to leave off the banana – I ended up picking all the banana off the top of mine. It just didn’t work with the chocolate. Yours looks absolutely fantastic though! I hope your migraine is gone.

This wonderful chocolate tart will fix any headache…and you were smart to leave the bananas off the top…next time I’ll leave them out of the bottom too…I’m dreaming about raspberries or Nutella or ……..

My dough turned out the same, so I kept it in the processor for a little longer and somehow it all came back together into a workable mess.

My dough was crumbly, but I just kept on pulsing the food processor and it came together in the end. The caramelized bananas were so much better than the raw ones. Nice job!
