TWD ~ Lemon Loaf Cake

Today’s post is a bit late.

I meant to have this made over the weekend, but that obviously didn’t happen.
After a VERY rainy week, Saturday and Sunday were glorious; far too beautiful to be inside baking.

Monday…I simply forgot.

Now here it is Tuesday, and I’m rushing to get my loaf ,and post, done.

I was actually really excited for this recipe.  Not too complicated, and who does not enjoy a good lemon cake.

I was going to make it as-is, but Pinterest got in my way.
I found a delicious looking blueberry lemon cake, and look at that, I have an extra pint of berries in my fridge:)

My Lemon and Blueberry Loaf Cake is based on the recipe from Baking with Julia (page 252)

Lemon Blueberry Loaf:
Beat together 5 tablespoons of softened butter and 1 1/3 cups sugar (will be light )
add to that 4 eggs (mix well scraping down the sides of the bowl)
add in the zest and juice of 1 lemon
sift together dash of slat, 1 teaspoon of baking powder, and 1 3/4 cups flour
add to the egg mixture
add 1/4 cup milk (I used whole milk), and then gently fold in 1 cup of blueberries

Spoon into a buttered loaf pan and bake @350F for 50 – 60 minutes

  9. I wonder if doing it the old-fashioned way of creaming butter and sugar changed the texture much. The blueberries are a great combination and surely added some moistness! Nice cake!
