With all of the chocolate around here lately, I am feeling the need for something with cinnamon.
I was thinking of snickerdoodles, but I’m not really in the mood for baking cookies, or eating them for that matter.
I really love baking bread, but I’ve already done cinnamon swirl, and rolls take entirely too long.
So…I decided to use a little bit from each recipe.
This bread has the dough from a cinnamon roll, rolled into balls like monkey bread, and then rolled in cinnamon and sugar like a snickerdoodle.
Turned out to be a delicious experiment. {and you should smell my house}
For the dough:
add 1 package of yeast to 1/4 cup of warm water – let rest a few minutes
add 3/4 cup of sugar, 1 cup of warm milk, 2 tbsp melted butter and 2 eggs, 1 tsp vanilla and 1 tsp cinnamon
slowly add in 4 – 41/2 cups of flour (I used 1 cup of while wheat flour and 3 cups AP)
knead with the dough hook
Let rise until doubled
Combine 3 tbsp raw sugar with 3 tsp cinnamon
Divide the dough into sections and roll in balls
Roll each ball in the cinnamon and sugar
Place in a cake pan (I used a spring form pan to make it easier to get the bread out)
Let rise again (for about 30 minutes – I left mine a bit longer because of carpool)
Bake at 375 for about 20 minutes.
Let the bread cool slightly before removing from the pan
