It’s that time of year.
We’re down to the final 4 1/2 weeks of school.
AND…I am sick to death of making lunches!!
I happily prepare breakfast before my family heads out the door to work and school.
I look forward to making dinner, but lunches make me crazy. I’m not really sure why.
Tomorrow is field trip day, and we need to be out extra early. I am in desperate need of a lunch intervention.
Then, I remembered I had a pie crust in my freezer. {I used only one for the raspberry hand pies}
What could I do with this?
Pizza Pies:)
I used a cookie cutter to cut my pie dough
We usually have pizza toppings left over from our Friday pizza night.
I used a bit of sauce, pepperoni, and prosciutto, and then topped it off with just a bit of fresh mozzarella.
Folded my pies in half – crimping the edges
Bake @ 450F for about 10 minutes
Lunch was done!
I even had leftover crust so I made some mini-apple pies for a lunch box treat:)
| one small diced apple with cinnamon and sugar |
| fold and seal edges top with cinnamon and suger |
| Bake @450 10 minutes |
