{homemade} oreos

Cookies are some of my favorite things to bake.
For the most part they’re quick, easy, and so delicious hot from the oven.
With the exception of holiday time, I don’t usually get too creative with my cookie making. Oatmeal, chocolate chip, and the occasional Madeleine.
Then… the Oreo craze hit. I’ll admit I had my share of the 100th birthday Oreo cookies.

But most things are better homemade, and the homemade Oreo cookies at my kitchen addiction were calling my name.

 Recipe adapted from
  my kitchen addiction

For the cookies:
Combine the dry ingredients: 2 cups flour
 3/4 cup cocoa powder
 1 tsp salt
 1 tsp baking powder

 On medium speed cream 2 sticks of butter (I know but it is SO worth it) with 1 cup of sugar
 add 1 tsp vanilla and 1 egg
 scrape sides of the bowl and then add in the dry ingredients
 Flatten the dough into a disc and chill at least an hour
 After chillin’:
roll the dough to 1/4 inch thickness, and cut out using a small cookie cutter (champagne flutes work great)

Bake at 350F for 10 – 12 minutes
 While the cookies are cooling make your filling
Mix 1 stick of butter with 1 tsp vanilla and 2 tablespoons of heavy cream
slowly add in the powdered sugar (about 3 cups total) frosting will be thick
Once the cookies are cool spread half with the frosting, and top with the remaining cookies.

My kids think these are better than the originals :)
